1st Canap' Event by Supermiro with chef Clovis Degrave from the Hostellerie du Grünewald. Since we can’t visit his super restaurant, we open a window into his kitchen. Oh and by the way, he set up a take away service to help, in particular people who struggle to cook for themselves. To order, click here.

VEGETARIAN DISH : CONFINED CONFIT CAULIFLOWER
INGREDIENTS: (important! Shout it in Gordon Ramsay’s voice )
- 1 cauliflower
- A handful of stripped nuts (yes, you read that right)
- A handful of unsalted green pistacchios (so save the other ones for the apero)
- Liquid honey, honey.
- Olive oil or butter, because why not
- Spinach (strong like Popeye)
STEPS:
So what was it again ? Oh, yeah:
- Mix finely a few pistachios and hazelnuts (don't eat them all before)
- Cut the cauliflower in 2 and again in 2 for thick slices (4 cm)
- Cook the slices in water muy caliente (or you know, boiling 😅)
- Once the cauliflower slices are al dente, place them on paper towels
- Pour some liquid honey on a plate
- Brown a shallot in olive oil
- Lightly cook the spinach leaves and arrange them on a plate
- Roast the cauliflower slices in butter in a frying pan
- Dip in honey and then in the crumble and arrange on top of the spinach.
- With the rest of the cauliflower, let's make a velvety smoothie:
- Brown onion in a stewpot
- Add leftover cauliflower, cut into small pieces.
- Let them brown with butter
- Add water until the cauliflower is covered.
- Bring to a boil
- Add a poultry stock base
- Let cook over low heat until the cauliflower is soft
- Mix it up and you're done
